I’ve been having this annoying intermittent problem since upgrading to the latest version of the Safari 3 Beta where after the program’s been open for a while, typing anything into the location bar goooooes verrryyyyy sloooowwwwly. You’ll type a few letters, and there will be a several second spinning beachball of doom while you wait for the computer to catch up with you.
Thinking that the problem might again be related to some of my add-ons, I uninstalled a couple of them temporarily, but it did nothing to the fix the issue. So, resorting to the time-honored tactic of reading Apple’s discussion boards, I came across others who had encountered the same problem as well as their proposed solution: emptying the cache.
I gave that a try, but again, it didn’t seem to have much effect, so I decided to, as Emeril would say, take it up a notch (bam). Invoking the “Reset Safari…” menu item gave me the option to clear out lots of useless information, including the cache, favicons, and the history. I set it to wipe everything except my account and AutoFill information, and told it to leave my windows open.
Sure enough, that seems to have resolved the slow typing issue, so if any of you are feeling frustrated, give that a shot.

Use with caution...."invoking the "Reset Safari..." menu item" DIDN'T give me the option to choose what it reset, and so all my auto-fill information is now gone.
Don't know if it's a version thing, but I'm on Safari v. 2.0.4 (419.3) and up-to-date on the OS.
Hrm, maybe it's a new feature in the 3.0 beta; I don't think I ever used it in previous versions, so I'm not sure.
Safari 3.0 Beta has a new menu for resetting Safari. In all previous versions you did not have any choice over what it was clearing, but in the new beta you do. This is a great improvement as I use the reset function frequently and now I have the option of choosing what to and what not to clear.
I reset everything except remembering my passwords and mine is still sluggish, though not as bad. Then again, I never had the spinning beach ball of doom.
I think it just might be my computer, the whole thing is being sluggish.
